What does Roman Nejedlý, roaster from Fiftybeans, say about this coffee?

Aulia Kahfi started his working career as a mineral prospector, but that changed when he inherited the Rakyat coffee farm. He completely fell for the choice coffee and is now a passionate farmer who tries the latest methods of cherry processing.

The lot that is selected is processed using the anaerobic fermentation method. After picking, the cherries are placed in plastic barrels where they ferment for 24 hours. Due to the high humidity and temperature in Indonesia, the coffee barrels must be in a closed room with controlled temperature during fermentation, otherwise the cherries could be damaged by the formation of alcohol.

After this coffee is roasted, a Loring S15 Falcon roaster is used, which uses convection, or hot air, as the main source of heat energy dissipation. This allows the flavour nuances of this coffee to be worked with great precision, thus managing to preserve its high juiciness and sweetness.

Use the beans no earlier than 7 days after the roasting date. After the 1st opening, we recommend 'airing' the coffee package for at least 4 hours to avoid bitter flavour notes.
