It would be misleading to think that we can assign the adjective "excellent" to any slightly better quality coffee. In order to become truly selective, coffee must meet very specific requirements. From the history of selective coffee

Choice coffee as such has existed for more than a hundred years. At the beginning of the twentieth century, first suppliers and then, of course, also customers who really cared about the quality of the coffee. They carefully chose who they buy coffee beans from and how they subsequently process them. Nevertheless, we had to wait almost seventy years for the concrete label "choice coffee". This term first appeared in the prestigious Tea and Coffee Trade Journal and together with it was born....

Definition of fine coffee

In order to be able to mark the coffee as selection, it must obtain at least 80 points out of 100 within the framework of the certified assessment of the SCA (Specialty Coffee Association) company.

This is coffee:

• cultivated to ideal conditions in terms of soil quality and altitude
• harvested at the right time and of course
• properly processed.

Such coffee receives adequate care, which of course is reflected in the taste and aroma of the resulting drink. And behind it all are people who have dedicated their lives to the most popular drink in the world. It is only thanks to their dedication and enthusiasm for the cause that selection coffee is available to the widest public today.

Who is behind premium coffee?

Farmer

Of course, it all starts with the grower, these are often family farms that pass on the experience of growing coffee for generations and the highest quality is at the forefront of their interest.

Green Coffee Merchant

Choice coffee can only be purchased by an expert with SCA certification, who is also an experienced sommelier in order to be able to recognize really high-quality coffee and communicate with the roaster at the necessary level.

Roasting House

Again, it must be a certified facility with staff who roasting coffee has raised to an art and whose level of knowledge and acquired experience are a guarantee of the highest quality standard. And then he takes over the baton...

Barista

Another proven expert. He takes care of the selection of coffee - so to speak - in the finish line. However, it has enough information about the origin of the coffee and its flavor profile. Only then can he take on the final task, which is the preparation of the drink itself.

Consumer

It can be you, for example. One does not need courses or training to be able to enjoy fine coffee. All you have to do is find a cafe that works with selected coffee, or a shop where you can select coffee and you will then take on the role of barista yourself. Plus, you don't have to go far.
