The Karimikui processing station is part of the Rung’eto Farmers Cooperative Society (FCS), which also manages its operations. Coffee cherries are supplied here by small-scale growers from the surrounding area, whose farms are located at an elevation of approximately 1,700 to 1,900 meters. They grow the SL28, SL34, Ruiru 11, and Batian varieties here. The station was established in 1953, making it one of the oldest in the entire region.

Small-scale farmers hand-pick only ripe coffee cherries and then transport them to the Karimikui processing station. Upon arrival, they undergo careful inspection and sorting in water. Only sufficiently ripe, high-quality cherries with high density are selected for processing.

The cherries are then de-pulped, followed by fermentation, which lasts approximately 12 to 24 hours. The coffee is subsequently washed with clean water and soaked for another 24 hours. This step helps manage processing during the peak harvest season, when there is often a shortage of space on the drying tables. Soaking can also contribute to a cleaner flavor profile and help green beans retain their quality longer during storage.

The parchment coffee is then spread out on elevated drying tables or placed in a solar dryer. Workers turn it regularly to ensure even drying. During the hottest part of the day, they cover it to prevent the process from proceeding too quickly, and they protect it from moisture overnight. Drying takes approximately 7 to 21 days. Finally, the coffee is bagged, the parchment husk is removed, and it is prepared for export.
