The leaves are then gently shaken, which initiates oxidation, but this is subsequently stopped by short heating. This step is crucial because it determines the level of fermentation, which can range from 10% to 80%, affecting the final character of the tea. The result is a rich and complex tea with a flavor that combines the freshness of green tea and the depth of black tea.
