Tie Guan Yin, also known as"Iron Goddess of Mercy", is one of the most famous oolongs from the Anxi region of Fujian Province, China. This tea is one of the semi-green teas (oolongs) and is characterised by its unique production process, which gives it a complex flavour profile and rich aroma. Tie Guan Yin tea leaves are carefully rolled and gradually unfurl after pouring, releasing delicate floral aromas and bringing a fresh taste with light orchid notes and a sweet creaminess.

The taste of Tie Guan Yin is balanced, with subtle floral accents and a pleasant sweetness that lingers on the palate. This tea is an ideal choice for those who want to explore the richness and depth of oolongs, and offers an excellent repeated infusion experience where different layers of flavours are gradually revealed.

Oolong is a type of tea that lies between green and black tea. It is partially oxidised, which gives it a characteristic complex flavour profile with a combination of floral, fruity and sometimes subtly roasted notes. Oolongs are characterised by a rich, layered flavour and are often rolled into small balls or twisted leaves. They are popular for their ability to reveal different flavour nuances with repeated steeping.

Classical preparation in a teapot (500 ml):

  • Tea quantity: 8 grams
  • Water temperature: 90 °C
  • First infusion: Steep for 4 minutes.
  • Second and subsequent infusions.

Preparation in gaiwan (100 ml):

  • Quantity of tea: 4 grams.
  • Water temperature: 95 °C
  • First infusion: Infuse for 60 seconds.
  • Steep for 60 seconds for the second and thirdinfusions, then 90 seconds for the fourth infusion.
