Bai Mu Dan, known as White Peony, is one of the most important white teas originating from the Fuding region of Fujian Province, China. This tea is made from young, carefully harvested buds and the first two leaves, which are minimally processed to retain their natural freshness and delicate flavor.

Bai Mu Dan is characterised by a slightly sweet taste with subtle floral and fruity notes reminiscent of peonies and fresh fruit. Its light infusion and light, refreshing taste make it an ideal choice for those seeking a delicate yet complex tea experience. With its delicate processing and high quality, Bai Mu Dan is a great example of traditional white tea from the Fuding region. It has less caffeine than other teas and so is suitable for drinking in the afternoon and late hours

Classical preparation in a teapot (500 ml):

  • Tea quantity: 8 grams
  • Water temperature: 80 °C
  • First infusion: Steep for 120 seconds.
  • Second and third infusion: Increase the water temperature by 5 °C and infuse each infusion for 60 seconds longer than the previous one.

Preparation in gaiwan (100 ml):

  • Quantity of tea: 4 grams
  • Water temperature: 90 °C
  • First infusion: Steep for 30 seconds.
  • For the second and thirdinfusions, infuse for 45 seconds, followed by 60 and 90 seconds for the subsequent infusions.
