The Castillo and Caturra coffee varieties come from Colombian farmer John Hurtado. After 30 years in the USA, he returned to Colombia and took over the Mahusa farm from his father. In addition to growing fine coffee, he is dedicated to the restoration of local nature. The coffee is roasted on a Loring S15 Falcon roaster, which allows for precise flavor work and preserves its juiciness and sweetness.
In the washed method, the coffee cherries are first stripped of their skins and pulp, then fermented, rinsed and dried in the sun. This method ensures a cleaner taste, higher acidity and fruit notes, thus highlighting the character of the variety and the terroir.
The barista recommends pouring 100 °C water over the coffee, as it is a myth to use higher temperatures due to the possibility of 'burning' the beans. It is roasted at 600 °C, so there is no way to 'burn' the beans. For filter coffee, it is best to use the beans no sooner than 7 days after roasting.
After first opening the package, let it air out for at least 4 hours before brewing to avoid bitter notes in the flavor.
