Barista recommendation:
Automatic coffee machines: Set the grind to the second finest grade, for machines older than 4 years choose the finest. Keep the water temperature medium. Set the espresso output volume to 45 ml and adjust to taste.
Lever coffee machines: set the pressure on the machine to 6 bar and the temperature to 91 °C. Grind 18 g of coffee and extract 42 g of espresso in 30 seconds. Adjust the output to taste. Always use filtered or bottled water with an alkalinity of 60-80 ppm.
Good to know:
Always use beans no earlier than 10 days from the roasting date for espresso. After the 1st opening, allow the package to air out for at least 24 hours before brewing. This will prevent unwanted bitter notes in the taste.
