Swiss Water Decaf Process

The Swiss Water Process is surprisingly Canadian, not Swiss. However, the technology itself was first developed in Switzerland. The decaffeinated coffee of the Swiss water method is different because the process does not use any chemicals to extract caffeine from the grains . The decaffeination process depends solely on the osmosis properties and the solubility of the individual coffee beans. The whole process begins with the creation of a green coffee extract using fresh water and all the soluble solids in the coffee (minus caffeine). GCE is the key to the process. Prior to decaffeination, green coffee is rehydrated to achieve a targeted moisture that is ideal for caffeine removal. This step also removes dirt, dust and silver skin. GCE is constantly circulating around green coffee for 8-10 hours until 99.9% of the caffeine molecules from green coffee pass into the GCE. Caffeine is then removed from the GCE through a proprietary carbon filter system and the carbon is sent to a recovery furnace to burn caffeine. so that it can be used again. Once 99.9% of the caffeine has been removed from the coffee, it is ready to be dried, bagged and sent to customers.
