Swiss Water Decaf Process
Surprisingly, Swiss Water Process is Canadian, not Swiss. However, the technology itself was first developed in Switzerland. The decaffeinated coffee of the Swiss Water Method is different because the process uses no chemicals to extract the caffeine from the beans. The decaffeination process depends entirely on the osmosis properties and solubility of the individual coffee beans. The whole process starts with the creation of a green coffee extract using fresh water and all the soluble solids in the coffee (minus the caffeine). GCE is the key to the process. Before decaffeination, the green coffee is rehydrated to achieve a targeted moisture content that is ideal for caffeine removal. This step also removes dirt, dust and silver skin. The GCE is continuously circulated around the green coffee for 8-10 hours until 99.9% of the caffeine molecules from the green coffee have passed into the GCE The caffeine is then removed from the GCE through a proprietary carbon filter system and the carbon is sent to a regeneration furnace to burn the caffeine so it can be reused. Once 99.9% of the caffeine is removed from the coffee, it is ready to be dried, bagged and shipped to customers.
