Tasty and quick recipes for coffee desserts

Without coffee? And that you like to improve your cup of invigorating drink with a dessert? We've got simple recipes for no-bake coffee desserts that make use of coffee in the preparation.

If you love the taste and smell of coffee so much that you're not content with just sipping it, come and join us in making desserts where you can enjoy your coffee to the full. And the good news is that anyone can make them.

Unbaked Chocolate-Coffee Cheesecake

If you're going to treat multiple people, this cake is absolutely perfect. Just ideally prepare it the day before so it has time to set in the fridge. A round cake tin with a diameter of 25 cm is ideal for preparation.

Resources:

  • 200 g unsalted cashews - soak them in cold water overnight

  • 250 g cocoa biscuits (e.g. Derby)

  • 1 tablespoon of ground coffee

  • 100 g butter

  • 500 g cream cheese - ideal is e.g. Philadelphia or Lucina

  • 300 ml whipping cream

  • 165 ml honey or maple syrup

  • 2 teaspoons vanilla extract

  • 11 slices of gelatine

  • espresso or two tablespoons of instant coffee poured over 165 ml of hot water

  • 250 g dark chocolate

  • 250 g milk chocolate

  • Dutch cocoa for sprinkling

Procedure:

First, line your tin with baking paper. Then drain, rinse and drain the cashews. In a food processor, blend the biscuits with the ground coffee and melted butter, and pack the finished mixture into the bottom of the tin, chilling in the fridge for now.

Place the cashews in the cleaned food processor and blend them as finely as possible. Once done, add the cream cheese, vanilla extract, cream and honey. Blend again until the mixture is smooth.

Then melt both chocolates in a water bath. Next, prepare the gelatin by letting the slices soak in a little water for about 5 minutes. Meanwhile, heat espresso or instant coffee in a saucepan. Add the squeezed gelatin to the coffee and once it has dissolved, pour the mixture together with the melted chocolates to the cashew mixture, mix thoroughly and pour over the prepared cookie base.

Refrigerate the cooked cake for at least 5 more hours. Before cutting, dust lightly with cocoa powder.

Chocolate and coffee mousse cake

Chocolate mousse is a simple no-bake dessert that tastes great on its own, or you can top it with more acidic fruit. Please note that it needs to be refrigerated for about 3 hours before serving.

Coffee froth ingredients:

  • 1 slice of gelatine

  • 40 ml espresso or filter coffee

  • 160 g condensed milk

  • 120 ml whipping cream

  • 3 tablespoons granulated sugar

  • 2 egg whites

  • pinch of salt

Chocolate mousse ingredients:

  • 70 ml whipping cream

  • 100 g quality dark chocolate

  • 1.5 tablespoons of granulated sugar

  • 2 egg whites

  • a pinch of salt

  • Dutch cocoa

Procedure:

Before you start making the coffee foam, put the gelatine in slightly cold water to swell. Heat the coffee in a saucepan, but be careful not to let it boil. Stir the gelatine into the warm coffee and then pour the mixture into the condensed milk and stir well.

Whisk the cream and mix with the condensed milk with the coffee. Next, whisk the egg whites with the sugar and a pinch of salt. The egg white needs to be firm but not completely stiff so that it combines well with the whipped cream. Gently work it into the whipped cream with a spatula and fill the prepared glasses halfway. Then place them in the refrigerator.

To prepare the chocolate mousse, bring the cream to the boil in a saucepan, then pour ¾ of the chocolate over it. Stir until the chocolate is melted and then add the rest of the chocolate and stir until smooth.

While the chocolate is cooling, whisk the egg whites with the sugar and a pinch of salt and then gently fold into the chocolate. Then place the mixture into coffee layer glasses and leave to cool. Sprinkle the cup with cocoa before serving and you're done.
