Our first ever coffee from El Salvador. And why? We've been waiting for this sweet treat! Strawberries and raspberries in a delicate milk chocolate wrapper? We're gonna love that!

We roast our coffee primarily on a filter, but it also works as a very fruity espresso.

La Montana - red cherry

At El Borbollon mill, we asked them to make us a natural batch this year using ripe cherries selected from the best parts of the farm. The cherries are delivered from the farm where they are then macerated and separated to ensure that only ripe cherries are used in the production of these batches. Once the cherries are ready, they are moved to the garden. Usually in the late afternoon so that they lose their initial moisture without the 'heat shock' of the strong afternoon sun. They are then left for 48 hours without intervention to stabilize them, and prevent damage to the surface of the cherry while it is soft. The coffee is turned every 45 minutes - 1 hour on the terrace until it reaches 11% moisture. Terrace drying usually takes 10-14 days. It is left there in grain bags for 30 days to set. It is then shelled and ready for dispatch.
