What does Rebelbean Roastery say about coffee?
Last year we had coffee from this processing plant in the Underdog edition and through this project we invested 12,000 CZK in portable coffee drying screens. This year, by planning production volumes more than six months in advance and better logistics, we have been able to increase the volume of coffee from Uganda and it stands to reason that the largest volume is from the hands of Michael.
AA is a designation for the graded portion of coffee with higher density, less defects, but primarily based on the bean size, which is referred to as "screen size" (greater than 18). Since these factors are also correlated with the taste of the coffee, the coffee with the AA designation should therefore be the highest quality, as there is no official higher grade (our AAA designation is fictitious, as it corresponds to a screen size of 19 ). In addition, this lot is further divided into 'highland' and 'midland', i.e. coffee from higher and lower altitudes. There is not much difference in taste between the two parts of the lot, but the 'highland' has a more complex acidity and is more fresh and light. We decided to roast both in sequence, so every week in the line-up, it's a few dozen metres downhill!
