The family history is closely linked to coffee, beginning more than 50 years ago when Rafael's grandfather (known as Seu Zico) planted the first coffee seeds. Since 2007, the family has specialized in growing select coffees and improving their quality, and have been certified by the Rainforest Alliance, 4C and Sertifica Minas. They are proud members of the Brazil Specialty Coffee Association (BSCA), which shows their commitment to the specialty coffee industry. Rafael is a known experimenter and innovator, looking for new ways to create unique coffee experiences. He combines different processing and fermentation techniques to create exclusive microlots with diverse nuances.
Processing:
This Catuai 144 variety has undergone a unique processing - double fermented honey coffee. After harvesting and floating sorting, the cherries were subjected to a 36-hour fermentation with oxygen, followed by a rapid cold water cooling - the so-called terminal shock. This was followed by a second stage of fermentation, anaerobic, lasting 122 hours, followed by dehulling and sun-drying for 25 days.
Recommended preparation on V60: 15g coffee, 260 ml, 2:30 min extraction
