What is GourmetCoffee Specialty?

It's a selection of coffees that we've carefully selected and Beansmith Roastery has roasted for us. There are many definitions, the SCA (Select Coffee Association) specifically states that it is coffee that scores at least 80 out of 100 in a professional evaluation, and contains no significant defects in taste. You will also always find 100% transparency (farms, importer, roaster and retailer) with our select coffees.

The best decaffeinated coffee? We found it and roasted it in the roastery

Decaffeinated coffees are often made from older coffees that have been "enriched" in this way, this is not the case with this coffee. Tumbaga is an excellent decaffeinated coffee with an emphasis on quality! The coffee has been profiled in the roastery so that it doesn't become one of the other mediocre chocolatey bitter decaffeinated coffees, but also has a nice fruitiness, and makes for a perfect filter as well as a nice espresso.

A gentle, non-chemical method of caffeine removal

Decaffeinating coffee with sugar cane uses the naturally occurring compound ethyl acetate (EA), which is extracted from molasses (a by-product of sugar production) in the process. Since EA occurs naturally, this process can be referred to as 'natural decaffeination'.

The process of producing EA is relatively simple. The coffee beans are moistened with water and EA is circulated in them. EA binds with the caffeine in the coffee beans and extracts the caffeine, while most of the other flavours are retained. Once the desired amount of caffeine is reached, the EA residue is removed from the beans by steaming.

Preparation tip

We don't write down the exact coarseness of the grind, as every grinder does it differently, but you can try grinding to get it right see the preparation procedure below. This is one option from the preparation.

Tumbaga coffee is named after an alloy of gold, copper and silver that was used in Colombia to make small, often religious items. This alloy symbolically combined the opposing energies of the Sun (gold) and the Moon (silver), creating a balance between opposites, much like our Tumbaga Sugarcane Decaf coffee. Our Tumbaga is a delicious decaffeinated coffee that will give you energy without keeping you awake at night.
