What is GourmetCoffee Specialty?

It's a selection of coffees that we've carefully selected and Beansmith Roastery has roasted for us. There are many definitions, the SCA (Select Coffee Association) specifically states that it is coffee that scores at least 80 out of 100 in a professional evaluation, and contains no significant defects in taste. You will also always find 100% transparency (farms, importer, roaster and retailer) with our select coffees.

What's different about our selection coffees?

Don't expect a distinct bitterness in the coffee, as they are roasted lighter than regular coffees. As a rule, you will find more fruity flavours in them. All of our coffees are primarily intended for home brewing like filter coffee, but that doesn't mean they can't be interesting in a mocha pot.

What are Pearl Beans?

They are pea-shaped beans that come from cherry fruits that have formed only one bean instead of two when ripening. Pearl beans differ from regular beans in several aspects; their unique shape, quality, more intense flavour and fuller aroma, which can vary depending on growing and roasting conditions.

Information from the farmer

The Wamuguma factory benefits from the rich volcanic soils and favourable climatic conditions of the area. About 1,000 active members work diligently to supply coffee to the factory, contributing to both the main harvest from October to December and the summer harvest from May to July.

Processing at the Wamuguma wet mill adheres to strict quality standards. After delivery, the cherries undergo a careful sorting process to ensure exceptional quality. Once peeled, the cherries go into one of the factory's fermentation tanks where they ferment for about 16-24 hours, depending on the ambient temperature. The coffee is then fully washed to remove all traces of mucilage.

After washing, the parchment is placed on the factory's raised drying tables where it slowly dries for approximately 14-21 days. The parchment is carefully covered during the hottest periods, which preserves the quality of the beans.

The coffee from the Wamuguma PB Lot factory is a strong testament to the tradition, strict processing and quality standards to which Ritho FCS adheres.
