The history of Inzá dates back to 1577, when Sancho García de Espino founded ASORCAFE on July 11. The aim was to help local farmers and producers to grow and sell fine coffee. They provided them with education, and development to improve economic and social conditions The association currently has 290 members.

Processing:

Inzá producers work on plots of 1.8 ha to 2 ha and grow coffee up to an altitude of 2100 m. Coffee is traditionally processed using the washed method. After harvesting, the coffee cherries are stripped of their skins and fermented for 20-40 hours, depending on the environment. The coffee is then washed and the unripe beans are removed. It is then dried in parabolic dryers for 8-15 days depending on the weather.

Variety:

Coffee usually has a high acidity with a cane sugar taste, originating from the volcanic soils of the Puracé volcano. Microlot Tierradentro strives to present the best of this area. The coffee has a sweeter and more floral character as a result of the later harvest.
