Huila, located in the south-west of Colombia, connects the Central and Eastern Andes. Its terrain is varied, ranging from the Magdalena River valley to mountain peaks. Huila's coffee is unique because of its origin, climate and harvesting cycles. The people who look after these coffee plantations play a key role in achieving excellent quality. Although Huila accounts for only 20% of total coffee production in Colombia, 80% of producers operate farms of less than three hectares. This is proof that even small farms can produce excellent coffee.

Colombia is best known for its washed coffees. Although practices may vary slightly between farms, usually the same day the coffee is harvested it is also de-husked. It is then subjected to open fermentation in special tanks for 12-36 hours. The coffee is then washed before being dried. Drying can take place on concrete surfaces, raised beds.

Ethyl acetate, which occurs naturally (e.g. in bananas) and also as a by-product of fermented sugars, is used as a solvent to bind to and remove caffeine from green coffee. The actual process of caffeine removal involves soaking the coffee beans in water to which ethyl acetate is added. This gradually binds the caffeine to the desired level. This is a very gentle method of caffeine removal.
