What does Rebelbean Roastery say about coffee?

Lisaura is one of the last farmers and farmers from Las Pirias that we missed out on featuring in the single origin production. Her coffee is commonly part of the Las Pirias village blend, which is such an evergreen in our production. And this year it will be his turn too!

We also managed to visit this farm in person during our trip to Peru. Lisaura comes across as a modest and a little shy person, but at the same time warm and hospitable. After a tour of the farm, where we were shown the fermenting concrete tank and drying shed, we gave her a t-shirt and a packet of coffee and were immediately invited to a big garden fiesta with barbecue and drinks, which unfortunately we couldn't make it then, but we are definitely going next time!

The Mundo Novo variety is not as common in the area as say Caturra or Castillo, so it gives Lisaura a slightly different resulting cup of coffee than say the surrounding farmers. After picking, he lets the whole cherries ferment lightly (well, up to 3 days actually!) in a concrete tank before getting rid of the floaters and peeling and washing the cherries. The coffee is then dried in a covered shelter, carefully made of blue plastic tarpaulins, as Lisaura believes that the blue colour keeps the temperature inside more stable than with transparent tarpaulins. Who knows, there may be something to it, because this coffee is beautifully clean, light and balanced!
