You probably already know that we are more than close to coffees from Honduras, and when the opportunity arose to roast this tropical goodness for you, we immediately said yes three times! So you can look forward to a chocolate ride complemented by rum and passion fruit . In short, in kind as it should be ! And as a bonus, you will certainly enjoy its organic certification .

Norma Iris Fiallos owns the San Rafael farm, located in the Los Limos area of Corquin, Copano. Norma is one of the most innovative producers in the area with a wide range of different varieties, including bourbon, catuai, maragogype and parainema. The farm is set in a pine forest, which significantly acidifies the soil and gives coffee a very unique cup profile . Coffee is completely grown in the shade and the production area represents a fraction of the total land. Producers will receive approximately 70% of the FOB price for their micro batches. This year, harvesting was extremely difficult for all producers, with increased rains during the harvest and a lack of pickers, which meant that large amounts of coffee were lost either by falling to the ground or by swelling and splitting in a tree.

This lot is processed with organic certification. The cherries are first washed and sorted according to ripeness. They are then placed in barrels without access to oxygen and allowed to ferment and macerate for 72 hours. The temperature in the barrel is maintained at around 22-25 ° C. The coffee is then transferred to African beds, where it is turned every hour. The drying time depends on the weather and is around 20-30 days.

All ML processing takes place in the Aruco mill, so that the process is centralized and more controllable. All this in order to create consistent procedures , but also to reduce risks for manufacturers. The mill is also located at 800 m above sea level, which gives the dryer a more stable climate for drying coffee compared to farms where the weather may be less predictable.
