The San Antonio Jerez farm of farmer Carlos Polo is located at an altitude of 1350 m above sea level at the foot of the Santa Ana volcano near the town of Juayua (Apanaca Ilamatepec mountains of the Sonsonate region - western El Salvador). After a career as an industrial engineer, he now devotes himself full time to coffee, where he is constantly trying to push the processing and thus the final product.

The lot in our range was processed in early 2020 (January - March) using the dry method. This is the Pacas variety, which is typical of El Salvador itself, as it is a natural mutation of the Bourbon variety. The coffee is fuller-bodied with a dominant flavour of cherry and fruit compote with praline undertones and a light wineiness.
