The story of coffee

Telila washing station - The station is located in Kecho Anderacha, Gera in the Jimma region at an altitude of around 2000 m above sea level. The station is owned and operated by Mike Mamo, a partner of Osito Coffee, who bought it in 2019 and it has already been commissioned in late 2019/early 2020. Telila produces quality washed coffees, as well as honey, natural and anaerobic ferments. In this quest to improve quality, Telila innovates in many interesting ways. Typically, most washing stations separate cherries solely by processing and where the cherries were delivered from, but Telila goes one step further and separates cherries by the day they were delivered. Mike and his team also store all the coffee in parchment in sealed bags- unique within Ethiopia.

Processing - The majority of the cherries supplied are one of two varieties; Gibirinna 74110 and Serto 74112. Both are from Metu Bishari selections from the same forest in the Illubabor Jimma Agricultural Research Center (JARC) zone in 1974. They were selected for their resistance to Coffee Berry Disease. They are currently one of the most widely propagated varieties in Ethiopia. The cherries are dried in a centralized location on raised African beds at an altitude of 2000 m above sea level for approximately 15-20 days in very thin layers. They are frequently mixed and rotated to ensure even and precise drying. These efforts result in some of the most interesting and purest coffees.
