The Nicolaides family has been involved in coffee for three generations - from their farming beginnings to their current company, Great Lakes Coffee, based in Uganda. The company specializes in processing and exporting green coffee, building community wet mills and producing natural coffees in the Rwenzori Mountains. It aims to provide a fully traceable yet fair supply chain that delivers a fair return to farmers. The emphasis on transparency and value addition increases the income of the growers and their standard of living.
Sironko Station is a key site for the collection and processing of coffee cherries from hundreds of smallholder farmers in the surrounding villages. They focus on growing Arabica varieties SL14 and SL34, which ripen in ideal conditions of alternating rain and sun. The result is harmonious coffees with rich aromas.
Anaerobic processing is an innovative method of fermenting coffee without access to air. The cherries are sealed in hermetic tanks where they ferment in a controlled manner for tens of hours. This process emphasizes sweetness, complexity and creates intense flavor profiles with notes of tropical fruits, flowers or spices.
