What does Roman Nejedlý, a roaster at Fiftybeans, say about this coffee?

Sebastian first removes the skin from the coffee cherries and then stores them in plastic barrels for 48 hours. During this phase, known as oxidation, the fermentation process begins , which helps the coffee respond better to the subsequent processing steps.

Dried strawberries are then added to the coffee cherries, and the entire mixture ferments for another 48 hours in hermetically sealed barrels. Once fermentation is complete, the barrels are opened and the coffee is spread out in thin layers on drying patios. During drying, workers regularly turn the coffee to ensure even drying.

After about 10–14 days, the remaining pulp is removed from the cherries, and the processing itself nears completion. After about another two weeks, the coffee is sent to Vertical’s dry mill, where the parchment layer is removed, the coffee is carefully sorted to remove any impurities, and then vacuum-packed. The green coffee prepared in this way is then shipped to our roastery.

For brewing filter coffee, we recommend using beans no earlier than 7 days after the roasting date. After opening the package for the first time, let it air out for at least 4 hours before brewing the coffee. This will help prevent unwanted bitter notes in the flavor.
