Country: Kenya, Kirinyaga

Processing: Washed

Variety: SL28 and SL34

Altitude: 1,900

Recommended brewing method: Filter (Hoop, Pulsar, V60, batch brew, Aeropress)

This coffee is exceptional for its pure varietal composition—it consists solely of the SL28 and SL34 varieties. You won’t find any Ruiru or Batian in it—varieties that are often added to Kenyan coffees today and can mask their typical juiciness and distinctive flavor profile.

It is precisely the combination of the SL28 and SL34 varieties that gives this coffee a fresh, juicy, and beautifully clean flavor profile. The traditional fully washed processing method also plays a major role in the resulting flavor.

The coffee comes from a processing station in the Kirinyaga region, to which approximately 500 smallholder farmers deliver their coffee cherries.

After harvest, the cherries are first submerged in water tanks, where unripe and low-quality fruits are separated. They are then stripped of their skins and pulp and transferred to fermentation tanks. Here, spontaneous fermentation takes place for approximately 24 hours.

The coffee is then thoroughly washed with clean water, which stops the fermentation process. Finally, the beans are dried on raised African drying beds for approximately 14 days until they reach the desired moisture content.

For brewing filter coffee, we recommend using beans no earlier than 7 days after the roasting date. After opening the package for the first time, let it air out for at least 4 hours before brewing the coffee. This will help prevent unwanted bitter notes in the flavor.
