Farm/Processing Station:

The López family has been growing coffee for over a century. Their first plantations were established by Vicente López in the mountainous region of Datanlí in the department of Jinotega. His work was followed by his son Vicente López Herrera, who founded the Betania farm. The family lost the farm during the conflict in the 1980s, but today they continue the family tradition on Los Papales and the new Betania farm.
Los Papales is located near the town of Jinotega on the slopes of Cerro Chimborazo at an altitude of 1 300-1 500 m. Thanks to its mountain climate, foggy forests and careful farming, it offers excellent conditions for growing fine Arabica. The varieties grown here are Caturra, Yellow and Red Catuaí, Java and Pacamara.
The harvest takes place from January to the end of March and the coffee cherries are hand-picked at optimum maturity. The farm employs about 120 people year-round and up to 450 during the harvest. Processing is carried out in the company's own water-efficient wet mill. The coffee is then dried slowly and evenly in greenhouses and under shelters, which helps maintain quality and traceability.
Los Papales is Rainforest Alliance certified and, in addition to growing coffee, is dedicated to supporting the local community. The farm has a school for the children of employees and surrounding families, as well as a health centre that provides free basic medical care.

Variety:

Pacamara is a variety developed in El Salvador in the 1950s by crossing the Pacas and Maragogipe varieties. It combines more compact growth and higher yields with large grains and a strong flavour profile.
It is characterised by its complex flavour, which can offer notes of chocolate, fruit and herbs. In washed processing, the flavour tends to be clean, fresh and delicately spicy, while natural and anaerobic processing brings out the sweetness and depth. In lesser quality batches, there may also be slight vegetable notes.

Processing:

The coffee is harvested at high maturity, with approximately 94% of the cherries fully ripe. It then undergoes a mechanical sorting process to remove defective and immature fruit. It is then dried in whole cherries on African raised beds for approximately 30 days and rested for at least 21 days before further processing.
