What is GourmetKafé Specialty?
It's a selection of coffees that we've carefully selected and Beansmith Roastery has roasted for us. There are many definitions, the SCA (Select Coffee Association) specifically states that these are coffees that score at least 80 out of 100 in a professional evaluation, and contain no significant defects in taste. You will also always find 100% transparency (farms, importer, roaster and retailer) with our select coffees.
What's different about our selection coffees?
Don't expect a distinct bitterness in the coffee, as they are roasted lighter than regular coffees. As a rule, you will find more fruity flavours in them. All of our coffees are primarily intended for home brewing like filter coffee, but that doesn't mean they can't be interesting in a mocha pot.

We don't write down the exact grinding coarseness because every grinder does it differently, but you can try grinding to get about what we have below. But it's really one of many different cases. It's just kind of a jumping off point.

Information from the farmer / Importer
Gakenke was built in 1991. The plant with 224 drying beds can process up to 750 tons per season. It has 2 flotation tanks, 10 fermentation tanks and 2 soaking tanks. The drying field has 150 raised beds.
The station has 1 780 registered farmer members spread over 22 hills in Gatare Municipality in Kayanza Province. They are organized in groups of 30 people, headed by a producer leader who facilitates communication and organization with the station.
Most of the coffee trees in Burundi are the Red Bourbon variety for quality reasons. Due to the increasingly smaller size of coffee plantations, the ageing of the rootstock is a very big problem in Burundi. To support farmers in renewing their plantations, Greenco buys seeds from the Institute of Agronomic Sciences in Burundi (ISABU), establishes nurseries and sells seedlings to farmers at a price below cost.
BDuring the harvest season, the coffee is selectively hand-picked. The cherries are floated in small buckets to check their quality. The good quality cherries are then sorted by hand and damaged, underripe and overripe cherries are removed. The cherries are then dried for 3 to 4 weeks on drying tables in a single layer. During the drying process, pickers go through the cherries looking for defective pieces. After drying, the parchment is bagged and taken to a warehouse. Experts in Greenco' s laboratory assess each batch and ensure traceability throughout the process.
