The blend combines two select Colombian coffees - El Diviso Peñas Blancas and El Paraiso PO2 - that combine a modern approach to processing and an emphasis on precise fermentation. Both coffees have undergone a washed anaerobic method that enhances their purity, aromatic and elegant fruity-floral character. The combination creates a harmonious whole, where light floral notes naturally complement the delicate sweetness and structured but fresh acidity. The resulting cup is balanced, smooth and pleasantly spring-like, without heaviness or excessive intensity.
The processing also plays a major role in the flavour expression. Anaerobic fermentation without oxygen, followed by a wash, allows the process to be precisely controlled and the aromatic components to develop while maintaining maximum purity. This allows the coffee to retain its delicacy, florality and sweetness without being heavy or alcoholic.
