Farm

The Vara Blanca farm is based on sustainable farming practices and agroforestry methods for growing coffee. Coffee trees here grow in the shade of taller trees, which help regulate the temperature and create favorable conditions for their growth. This cultivation method also supports the diversity of the local ecosystem and creates a suitable environment for pollinators, which contribute to the healthy growth and quality of the coffee cherries.

Location

Santa María offers very favorable conditions for growing specialty coffee. The surrounding forests help maintain a diverse and balanced environment that benefits both coffee plants and other crops. In addition to coffee, fruits and vegetables are also grown here, which supports local agriculture, greater community self-sufficiency, and more sustainable land use.

Processing

Honey processing lies between the washed and natural methods. After the skin is removed, a portion of the sweet pulp remains on the beans, with which the coffee is then dried on raised beds. It is this layer that influences the final flavor profile during drying, giving the coffee a more pronounced sweetness, a fuller body, and notes reminiscent of honey, caramel, and ripe fruit.
