COFFEE STORY:

FARM: Sookoo Coffee

Sookoo Coffee is one of the main Ethiopian partners of Osito, which has its main field of operation in the country.

They have been working with Sookoo's founder, Ture Waji, since the beginning of their operations in Ethiopia. Ture and his brother Assefa founded the company (officially Dambi Uddo Agro Industry) in late 2018/early 2019. During this first harvest, Osito and Dambi Uddo entered into their first registered purchase agreement.

Sookoo Coffee is located in Odo Shakiso in the Oromia region of Guji. Currently, Ture and Assefa exclusively produce dry-processed coffees from cherries sourced from the surrounding kebeles. Each lot is named after the so-called kebele, or village, from which the cherries originate (e.g. Shoondhisa or Bookkisa).

Processing: natural

Most of the cherries supplied are one of two varieties, Gibirinna 74110 and Serto 74112. Both come from Metu Bishari selections from the forest of the same name in the Illubabor Jimma Agricultural Research Centre (JARC) zone, selected in 1974. They were selected for their resistance to Coffee Berry Disease. They are currently one of the most widely promoted varieties in Ethiopia.

The cherries are dried in a centralized location on raised African beds at an altitude of 2173 m above sea level in very thin layers for approximately 15-20 days. They are frequently mixed and rotated to ensure even and consistent drying. These efforts result in some of the most interesting and purest coffees. Unlike other dry-processed coffees, they are characterised by high florality and acidity. They are often described as 'Ethiopia first, processing second'.

Insert the capsule into the coffee machine and enjoy the convenience of freshly brewed coffee. We recommend that you clean your NESPRESSO® coffee machine regularly so that you can fully enjoy your favourite beverages.
