What is GourmetCoffee Specialty?
It's a selection of coffees that we've carefully selected and Beansmith Roastery has processed for us. There are many definitions, the SCA (Select Coffee Association) specifically states that these are coffees that score at least 80 out of 100 in a professional evaluation, and contain no significant flavor defects. You will also always find 100% transparency (farms, importer, roaster and retailer) with our select coffees.
What's different about our selection coffees?
Don't expect a distinct bitterness in the coffee, as they are roasted lighter than regular coffees. As a rule, you will find more fruity flavours in them. All of our coffees are primarily intended for home brewing like filter coffee, but that doesn't mean they can't be interesting in a mocha pot.
Preparation tip
We don't write down the exact coarseness of the grind, as every grinder has it differently, but you can try grinding to get about what we get below. But it's really one of many different cases. It's just kind of a jumping off point.

Information from the farmer
Bekele Yitute comes from a family that has been growing coffee for generations - his wife and daughter are also close to the craft. He took over the Dambi farm from his ancestors; its name refers to the Dambi kebele area where it is located.
His farm is naturally organic - Bekele uses only organic fertilizers, legumes as intercrops for nitrogen fixation, and also food and cash crops to make the most of the land.
The plantation grows a mixture of indigenous local varieties (formerly known as "Ethiopian heritage") and JARC varieties bred by the Jimma Agricultural Research Centre. This research centre brings Ethiopian farmers more disease-resistant varieties that retain superior flavour in the cup.
Bekele and his family harvest coffee cherries by hand - picking only perfectly ripe red fruits. After harvesting, they re-sort them so that only the best ones go to further processing. They then spread the cherries out on raised drying beds, where they turn them regularly to dry evenly. The whole process takes about 15 to 18 days.
