Colombia 50 %
The Colombian part of Sebastian's blend goes through a strong fermentation process. After the skins are removed, the cherries are first allowed to oxidize in barrels for 48 hours, then dried strawberries are added and fermented in a closed environment for another 48 hours. The coffee is then dried for 10 to 14 days on patios, where it is turned over periodically. After drying, the parchment is removed in a dry mill and the coffee is sorted and prepared for export.
Ethiopia 50 %
The Ethiopian component of Yirgacheffe is processed using the traditional fully washed method. The cherries are first soaked, peeled and fermented in tanks to remove the remaining pulp. The coffee is then washed with clean water and dried on African beds for several days. This ensures that it retains a clean and fresh flavour profile.
Good to know: for filter coffee, always use beans no earlier than 7 days from the roasting date. After the 1st opening, allow the package to air out for at least 4 hours before preparing the coffee. This will prevent unwanted bitter notes in the taste.
