Kenyan coffees are great. In fact, there are few coffees in the world that combine juicy flavours with thick caramel notes so nicely, but... That's what gets boring over time. And that's exactly why this year I thought I'd give you a taste of what I'd call the next level of African coffee.
Many farmers in Kenya are not willing to experiment with cherry processing. The reasons are mainly economic. The rising cost of almost everything is, of course, reflected in the coffee industry, and so farmers are worried about the potential destruction of their harvests by these experiments. Fortunately, in my selection I came across this lot from the farmers of Pearless Estate, a private farm. They have decided to process part of their crop using the extended fermentation method.
They first hand-picked the cherries and sealed them in plastic bags for 80 hours. The cherries were then peeled, washed and dried. With coffee, this experiment literally worked wonders.
When hot, this gem resembles licorice sticks at their best. As it gradually cools, notes of lavender, jasmine, citrus and forest fruits begin to emerge. So who's tired of Kenyan currants, this is the coffee for you!
To roast this coffee, I use a Loring S15 Falcon roaster, which uses convection, or hot air, as the main source of heat energy. This allows me to work very precisely with the flavour nuances of this coffee, and thus I am able to preserve the high juiciness but also the sweetness.
For filter coffee, always use beans no earlier than 7 days from the roasting date. After the 1st opening, let the packet "air out" for at least 4 hours before preparing the coffee. This will prevent unwanted bitter notes in the taste.
The packet is infused with food grade nitrogen to slow the oxidation of the beans, so the coffee will retain its character even 45 days after roasting.
