Another representative of this continent is the naturally processed Heirloom Dega, which comes from a private farm in the Gedeo region owned by Kebede Maro. At 68 years old, Kebede is very vital and innovative. You can really see it in his production. Editor's note- Kebede has 21 children and all of them are doing well and getting a good education.
The coffee comes from an area full of ripe fruit, clean flavours and where sweetness and juiciness are balanced. The prototype of the perfect Ethiopian natural.
Expect tropical fruits, peaches, flowers and a light touch of punch cuts.
Roasted on a Loring S15 Falcon, which uses convection, or hot air, as the main source of heat energy dissipation. It allows to work very precisely with the flavour nuances of the coffee, thus preserving the high juiciness but also the sweetness.
For filter coffee, always use beans no earlier than 7 days after the roasting date. After the 1st opening, allow the packet to "air out" for at least 4 hours before preparing the coffee. This will prevent unwanted bitter notes in the taste.
The packet is infused with food grade nitrogen to slow the oxidation of the beans, so the coffee will retain its character even 45 days after roasting.
