An African gem that, in our eyes, may represent the future of fine coffee.
It is a coffee that has been fermented using a specially bred yeast called ORO. This yeast allows farmers to prolong fermentation and thus increase the quality of the coffee itself. Specifically, the ORO strain adds notes of red fruit to the coffee and improves body and sweetness. At the same time, the process is easily repeatable with minimal risk and additional cost.
In a country like Burundi, where the quality and volume of the harvest are very turbulent, controlled fermentation is a great relief for farmers.

To brew this coffee, a Loring S15 Falcon roaster is used, which uses convection, or hot air, as the main source of heat energy dissipation. It allows to work very precisely with the flavour nuances of this coffee and thus manages to preserve the high juiciness but also the sweetness.
For filter coffee, always use beans no earlier than 7 days after the roasting date. After the first opening, allow the packet to "air out" for at least 4 hours before preparing the coffee. This will prevent unwanted bitter notes in the taste.
The packet is infused with food grade nitrogen to slow the oxidation of the beans, so the coffee will retain its character even 45 days after roasting.
