Gildo is a man in the right place. She has been devoted to coffee all her life. He takes care of his own farm, educates other farmers and roasts the beans himself! It's a joy to come across someone like that!
Of the few samples available, the lot processed using the black honey method stood out . However, Gildo only processed this coffee on his farm. The cherries come from farmers Armando Sandoval and Marcos Jose.
The essence of the black honey method is that a thin layer of skin is removed from the coffee cherries and the shakes are then fermented. This method generates beautifully balanced flavours.
So you get lots of figs, flowers, yellow fruits and honeyin your cup.
To brew this coffee, the Loring S15 Falcon roaster is used, which uses convection, i.e. hot air, as the main source of heat energy dissipation. This allows me to work very precisely with the flavour nuances of this coffee and thus manage to preserve the high juiciness but also the sweetness.
For filter coffee, always use beans no earlier than 7 days from the roasting date. After the 1st opening, let the packet "air out" for at least 4 hours before preparing the coffee. This will prevent unwanted bitter notes in the taste.
The packet is infused with food grade nitrogen to slow the oxidation of the beans, so the coffee will retain its character even 45 days after roasting.
