The Intubuca region is located at a relatively high altitude and the naturals take much longer to dry. If handled properly, the taste is beneficial.
The cherries are placed on a drying bed and dried directly in the flesh for more than 2 weeks. Francisco uses a Loring S15 Falcon dryer, which uses convection, or hot air, as the main source of heat energy. This method allows the flavor nuances of the coffee to be precisely worked with and manages to preserve the high juiciness and sweetness.
For filter coffee, always use beans no earlier than 7 days after the roasting date. After the 1st opening, allow the package to "air out" for at least 4 hours before preparing the coffee. This will prevent unwanted bitter notes in the taste.
The packet is infused with food grade nitrogen to slow the oxidation of the beans, so the coffee will retain its character even 45 days after roasting.
