The Gitoki washing station in Gatsibo is part of Baho Coffee and represents a story of agricultural transformation. An area once known for banana cultivation has become a centre of excellence thanks to coffee. Today, banana trees provide natural shade for the coffee trees, improving their growth and the quality of the cherries.
Since its inception in 2013, Baho Coffee has supported farmers not only with agronomic assistance, but also with social programs targeting women and older growers. With four stations in each province of Rwanda, it has access to a wide range of flavor profiles and processing methods.
Variety
Gitoki primarily produces the Red Bourbon variety, which is valued worldwide for its quality and taste. This Bourbon variant is grown exclusively in Rwanda to prevent the spread of disease. Although it is susceptible to pests, the reward is sweet, fruity notes in the cup.
Processing
Harvesting is done by carefully hand-selecting only the ripest cherries. These are then subjected to floating - a water-based sorting method that reveals inferior fruit. After peeling, the coffee is dried for 30-35 days on African beds, where it is periodically raked to achieve even drying. This exacting process ensures an exceptional flavour profile that makes Gitoki coffee unique.
