The coffee beans come from the Colombian company Siruma, which was founded five years ago to support the farming communities in Cauca, Caldas and Tolima. The name Siruma means "sky and sky" in the indigenous Wayuunaiki language.

Atunkaadecaffeinated coffee is a symbol of Siruma's commitment to transparency and fair prices for farmers. It comes from the Association for Peace in Central Cauca (ACC) in Piendamó, Cauca province. ACC was founded by a local farmer to add value to the Castillo coffee variety and provide a stable income, helping the community avoid growing illegal crops.

After conventional natural processing, a process of caffeine removal took place:

Sugar Cane Decaf Process:
The coffee is first steamed at low pressure to remove the parchment. The beans are then immersed in hot water, which swells and softens them, preparing them for hydrolysis of the caffeine, which is bound to the salts of chlorogenic acid.

The natural extract from the fermentation of the sugar cane (without chemical synthesis) is added to the pre-prepared coffee. This is repeatedly washed with natural ethyl acetate to reduce the caffeine level. Once the process is complete, the coffee is stripped of the ethyl acetate residue by pressurised steam. It is then transferred to vacuum drying drums where excess water is removed and dried to a moisture content of 10-12 %.
