TheRutuma Farmers Cooperative Society is a relatively new entity that was established in 1995 after the split of FCS Mathira, which had 11 mills. In 2005, the Ruthanga, Tumutumu and Marua farmer cooperatives merged to form Rutuma Amalgamated FCS Limited, which was incorporated on 5 January 2005. The individual companies that merged already had existing community mills and so (despite its relatively recent formation) the company currently operates seven mills - namely Ruthagati, Marua, Karie, Ngandu, Githima, Kianjogu and Ndurutu - and boasts a total annual production of approximately 330 tonnes of green coffee per annum.
In the washed method of processing, the cherries go through what is known as a peeler, where they hit metal discs with prongs or spikes at tremendous speed, removing the skin and flesh. After this step, we are left with a green kernel, but with some of the flesh (sugar) still on it. To make it easier to remove the pulp, the grains are left to ferment in tanks for several hours, often tens of hours. After fermentation, the pulp is separated from the grain and goes down more easily. Here we come to the step that makes us call this method washed. The coffee is moved from the tanks to a washing channel where the beans are washed with water and the last of the sugars - the pulp - are removed.
