Nayo Ovalle is a third-generation agronomist and coffee producer. He took over Finca Terrazas in 2016. Since childhood, he has shown a great interest in coffee and since then he has been producing specialty varieties such as San Ramón and Caturra.
On this farm lies the El Buho estate, which represents the heart of the region. On the periphery of the native forest, this plot is exclusively used for growingCaturra and San Ramon varieties. The name El Buho is derived from the Spanish word for'owl', as it is the local owls that fill the air with their song.
After harvesting, the cherries must undergo a delicate process. After 24 hours in bags, they are carefully stripped of their flesh, fermented and washed for 24 hours. The coffee is then dried in the sun on concrete surfaces or raised beds. In some cases, mechanical dryers are used if outdoor conditions are not suitable.
