The new Ethiopia from Dachshund is suitable for filter coffee. The flavour features peach Haribo candies, honeycomb, nougat, and a rum aftertaste to round it all out.
This microlot was named after a local fruit, as the coffee resembles it with its full-bodied fruitiness. The coffee is sourced from 279 members of Daye Bensa, farmers from around the village of Keramo. All post-harvest processing begins with sorting according to bean density and discarding defective or immature coffee cherries. The coffee is then stored on African beds for 13 to 15 days. Here, each such 'bed' is then the responsibility of a specific worker who turns the beans regularly to achieve a truly consistent drying process. Each lot is strictly monitored to ensure that there is no confusion The traceability of each bean to a specific harvest (lot) is very important and precise here. Quality can thus be precisely verified and maintained at the highest level.
In the dry method, after harvesting, the cherries are spread in a thin layer on concrete patios or on African beds to dry. Alternatively, mechanical dryers are used for drying. The coffee must be turned regularly to prevent mould forming and unwanted fermentation. When drying is complete, whether in the sun or in a drying oven, the husk is mechanically removed in a so-called dry mill.
