Thehistory of the farm dates back to 1950, when it was acquired by Carlos' grandfather. After his death, his mother, who was very young at the time, took over the farm. This brought many challenges, but his mother kept the farm in its original state and continued the traditional way of farming. Carlos' father then took over the farm and began to make changes, from planting new varieties of coffee trees to pruning the trees.
Carlos is part of the fifth generation of coffee growers on this farm in Mexico and in 2012 he participated in the Taza Excelencia Mexico competition for the first time, where he achieved 6th place. The placement marked a major turning point and sparked a revolution in the approach to coffee. He and his family began to explore different varieties of coffee trees and experiment with new processing processes. He continues to compete and in 2023 he won 3rd place at the Cup of Excellence with a blend of Gesha and Pacamara.
All but a small number of the farm's coffee selections are processed using the dry (natural) method, and some undergo fermentation in sealed plastic containers to protect the coffee from UV light. The coffee is then dried on African beds.
