Norma Iris Fiallos owns the San Rafael farm, located in the Los Limos area of Corquin, Copan. Norma is one of the most innovative producers in the area with a large number of different varieties including bourbon, catuai, maragogype and parainema. The farm is situated in a shady pine forest which greatly acidifies the soil, giving the coffee a very unique flavor profile in the cup.
All processing of the coffee cherries takes place at the Aruco station, for greater process control and to create consistency, but also to reduce risk to the farmer. The station is located at an altitude of 800 m above sea level, which provides a drier and more stable climate compared to on farms where the weather can be less predictable.
After hand-picking, the coffee cherries are delivered to the washing station, cleaned and washed. The coffee beans are then moved to African beds where they are dried for 20-30 days and rotated periodically depending on the amount of moisture in the bean.
Natural coffee from Honduras is full of chocolate and spice, but you'll also notice a hint of sweet fruit.
