Las Capuquitas Douglase Urquii is one of the seven farms of Orígenes Coffee, which was founded in 2012 with the intention of promoting the sale of quality, premium coffee from Honduras. Douglas' main focus is the production of indigenous coffee varieties such as caturra, catuaí, typica and parainema. He is currently interested in experimenting and adapting new varieties such as obata. To maintain a balance in the environment, Douglas has planted guavas, cedars, mahogany, citrus and banana trees on the farm to provide shade for the coffee trees. The undergrowth is mowed three times a year with a machete and organic compost is applied twice a year in accordance with environmental protection and conservation requirements. The farm employs local workers all year round, which is a significant boost for the region. In the future, Douglas plans to invest more in training on coffee growing, recycling and safety for its workers.
After harvesting, the coffee cherries are washed, stripped of their pulp and taken to fermentation tanks where they are stored without air for about 72 hours, depending on the temperature. The beans are then washed and dried.
This coffee flavour highlights the true summer. Thanks to its experimental processing, it impresses with fresh fruity notes of wild strawberries and white currants and a full-bodied sweet taste of molasses and ripe mango. Recommended for hot and cold filter coffee.
