Dos Mundos: Our fastest coffee (picked this January) comes from Miguel Arias, who has been growing coffee for 30 years since he was 18 years old. His six-hectare farm called Santa Marta is located in Inza, Cauca. The farm is planted with tabi, castillo, tambo and pink bourbon varieties. In total, there are about 24 000 trees on the farm.
Processing takes place on the farm, where the coffee cherries are harvested and crushed. The cherries are then fermented overnight, after which they are washed and cleaned. The coffee beans are dried on African beds for 8-14 days depending on the weather.
A cup of filter coffee from this Colombian coffee is delicious and pleasantly sweet. The floral aroma is complemented by fruity notes of grapes and apples in the taste.
