The Rainforest Alliance, a non-profit organization based in New York, awards its certificates to coffee farmers and growers whose cultivation methods meet ecological and social criteria . These criteria are set to protect the environment, biodiversity and workers' rights .
Environment: farmers must restore or maintain the original forest cover of their territory so that at least 40% of the area is covered by shade. Growers must preserve natural watercourses . Any trade in wild animals, destruction of their natural environment, destruction of ecosystems or pollution of nature is prohibited. They strive for a permanent natural coexistence of wild animals, plants and people.
Social aspect: The goal of the organization is to eliminate child labor . Thus, children under the age of 15 may not be employed at all. Minors may be employed, but may not handle weights greater than 20% of their own weight, work in hazardous environments, and must always be accompanied by a parent or guardian. The goal is also to prevent discrimination of employees.
Taste : Brazil Fazenda Rainforest is characterized by very low acidity , a slightly nutty taste and, above all, a full taste of thick chocolate . The coffee is slightly sweetened.

I tried something new, but this coffee didn't really appeal to me.
Excellent coffee! It really does have a nutty flavor. I had it ground so I could see the right grind size for brewing in a dripper, but personally, I grind the beans a little finer anyway so it doesn't drip through too quickly.

Brazilian coffee simply never disappoints. The flavor is intense, and the coffee is relatively strong—certainly stronger than, say, Trung Nguyen. It has a creamy, slightly chocolatey flavor with a mildly acidic finish.
