Kevin and Kenny started by opening a coffee shop in Surabaya, Indonesia. Their interest in coffee gradually expanded from preparation to roasting to the origin of green coffee itself. This journey took them to the mountainous area around the Ijen volcano, where Kevenka was founded and today provides coffee cherry processing in the area. They have converted the original rice dryers into a processing station and Kevin furthered his knowledge in Colombia by obtaining his Q Processing Level 3 certification.
This Indonesian coffee is naturally processed with attention to careful selection and control throughout the process. Only fully ripe cherries are received at the Botolinggo station, which then undergoes a thorough sorting process. Drying takes approximately 11-13 days, depending on the weather, possibly with the gentle support of a mechanical dryer at a temperature of around 40 °C. After dehulling, final sorting and grading takes place, resulting in a pure and precisely processed natural coffee.
