This great natural coffee quickly gained a devoted following and literally disappeared from the shelves even faster!

So back in March, we reached out to our friend Jeremy at Touton Specialty Coffee and asked if Canaque coffee would be available again. His answer was yes, and as soon as Jeremy had samples available, he sent them to us for tasting. We did a thorough test - roasted 50g of green beans on an Ikawa roaster, waited a few days for the flavours to settle (who could stand it? :)), tasted (cupping), judged for ourselves and later immersed ourselves in a discussion about coffee with colleagues, exchanging opinions and insights.

The result?

The coffee was very similar to the one we had on offer so far, so there was nothing to discuss. We decided to offer it again.

After a year, we are buying it again in sufficient quantities so that you can once again enjoy a coffee with rum and nougat aromas and a mild, sweet taste.

In the dry method , after picking, the cherries are spread in a thin layer on concrete patios or on African beds to dry. Alternatively, mechanical dryers are used for drying. The coffee must be turned regularly to prevent mould forming and unwanted fermentation. When drying is complete, whether in the sun or in a dryer, the husk is mechanically removed in a 'dry mill'. The dry processing itself adds certain flavour aspects to the coffee, regardless of the variety or terroir. Often positive, but if poorly done, drying can be negative, irrevocably destroying the whole lot (part of the harvest). In the case of poor drying, we find fermented to alcoholic notes, yeast or even manure in the coffee. On the other hand, when the drying is done as it should be, the dry method always brings fruity flavours and creamy body to the cup.
