The Guji region, specifically the Okoluu region, is one of the highest coffee growing areas in Ethiopia. Here, coffee trees grow on small farms in mountainous terrain where heavy rains alternate with cooler nights. These conditions slow the ripening of the cherries and give the coffee room to develop a deeper and more balanced flavour profile. Growing is done without the use of chemicals, so the coffee meets organic standards.
The processing is natural, traditional and proven. The hand-picked ripe cherries are dried whole on raised beds for two to three weeks. Regular turning and careful inspection ensure even drying and a clean result in the cup. The flavour is natural, layered and not overdone.
